Aloo nimki is an incredibly popular street food from the eastern Nepali city of Dharan. It's a crunchy, saucy and flavourful symphony in your mouth. I remember as a kid in Dharan, eagerly anticipating the arrival of the Aloo Nimki vendor. His vibrant blue cart gleamed under the sun, and his animated call of "Alu Nimki!" rung through the streets, beckoning one and all. The distinct sound of ingredients mingling in the vendor's plastic jug, the signature crunch of the nimki, and the slosh of the rich sauce– simply sublime! Served on a newspaper cone and cardboard square for a spoon was so iconic. You can recreate this treat right at home, with this recipe. This recipe I'm about to share with you is authentically Dharan. I have not used any red food colour to give it that classic alu nimki red look but the flavour is authentic and all you need! Any leftover nimki can be stowed away in an airtight container and savoured for a whole week.

- Preparing the Sauce: For the aloo nimki spice sauce, make sure the gram flour mix is lump-free. It's important for a smooth and silky sauce. Also, remember to remove the pieces of dried red chilly after the sauce has cooled.
- Serving: Always serve the aloo nimki immediately after mixing everything together. The nimki can become soggy if it sits too long with the sauce.
- Storing Leftover Nimki: If you have leftover nimki, store them in an airtight container at room temperature. They will stay fresh for about a week. You can enjoy them as a snack or use them in other recipes.
- Individual Portions: You can make individual alu nimki portions if you prefer. This can be a fun way to serve at a party, and it allows everyone to customize their aloo nimki according to their taste.

- More Veggies: To add more nutrients to your dish, include finely chopped fresh vegetables such as bell peppers, cucumber, or shredded cabbage.
- Protein Boost: Add some boiled chickpeas or cooked lentils to the mix for an extra protein boost.
- A Touch of Sweetness: For a sweet and savoury version, add a drizzle of sweet tamarind chutney or date syrup over your aloo nimki before serving.
