I will start by saying that there is nothing quite like Pork Momo Dumplings from Dharan! In Dharan, a city known for its exceptional pork, the pork momos are a real treat. These dumplings have earned their fame across Nepal for their juicy succulent flavor and the freshness of their taste. The secret of these delicious momos is in the pork. The high-quality pork used has just the right amount of fat, making the dumplings juicy and full of flavor. When you bite into them, you'll taste the rich pork combined with a mix of gentle spices and herbs. What makes these momos even more special is the clear pork broth soup served alongside them. This soup, made in the same water used to steam the momos, is simple yet full of flavor, making the meal even more enjoyable.
These momos are a reminder of home for anyone from Dharan. The allure lies in its simplicity - humble ingredients coming together to create something truly magical. My family are from Dharan so Pork Momo dumplings are a staple in my family gatherings. We all work together to make the momos, some making the dough, some making the filling, whilst others are busy with wrapping up the momos. We always make sure each momo dumpling is filled generously to the brim so it is guaranteed to bring joy with every bite. There's a certain happiness that comes from sitting down to a meal of these momos with a warm bowl of soup.

Why are Dharan Pork Momo so famous?
The food culture in Dharan is all about using fresh local ingredients, especially when you see its renowned pork industry. The city takes pride in its high-quality pork, which is a staple in many local dishes. The pork is known for its tenderness and flavor, resulting from traditional farming and feeding practices that have been perfected over generations.
Among the most celebrated dishes in Dharan is the pork momo. These momos are simple but packed with flavor, reflecting the city's love for rich and hearty flavors. The dumplings are carefully crafted, with a filling made from finely minced pork mixed with a blend of local herbs and spices.

These momos are not just a food item; they are a Dharan cultural icon, enjoyed in casual street-side eateries and upscale restaurants alike. They symbolize the communal spirit of Dharan, often enjoyed with family and friends during gatherings and festivals.
Tips for making the perfect Dharan Momos

- Selecting the Right Pork Mince: Opt for pork mince with a higher fat percentage for juicier momos. Pork belly mince is ideal for this. Visit your local butcher and ask for fresh pork mince. The fat in the mince adds flavor and keeps the momos moist.
- Pork for Soup: Use pork with a piece of bone to make the broth for your momos. The bone adds extra flavor to the soup, enriching its taste and giving it a depth that complements the momos perfectly.
- Resting the Dough: Allow the momo dough to rest for 15-20 minutes, covered with a moist cloth or cling film. This resting period helps the dough become more elastic and easier to work with, resulting in better-formed momos.
4. Preparing the Vegetables: Finely chop or grate the vegetables you're using in your filling. This is crucial for achieving the right texture and ensuring that the natural juices of the vegetables are released, which adds flavor and moisture to the filling.
5. Sealing the Dumplings: Pay attention to the sealing of the dumplings. Press the edges together firmly to ensure they are well-sealed, and check that there are no air pockets inside. A good seal prevents the filling from leaking out during steaming and keeps the momo's shape intact.

- 1 inch Ginger Ginger piece lightly crushed
- 2 clove Garlic Whole garlic piece gently crushed
- 1 Tomato cut into large chunks
- 6 stems Spring onions
- 1 teaspoon Salt
- 4 stems coriander finely chopped for garnish
Instructions
Making the Dough
- In a large bowl, add the flour and corn flour.
- Gradually pour warm water into the bowl, a small amount at a time. Add just enough water to start forming a more solid dough structure. You don't want the dough to get too sticky, as the starch soaks up water, it will slowly become softer.

- Mix and knead the dough for several minutes until it becomes soft and pliable.

- Cover the dough with a moist cloth or cling film and let it rest for 15-20 minutes. This will allow the dough to relax and become more elastic.
Preparing the Filling
- While the dough is resting, you can start preparing the filling for your momos. Place minced meat in a large mixing bowl.
- Add the rest of the momo filling ingredients to the bowl. Mix the ingredients together well ideally using your hands to really mix everything well (you can use a glove)
Making the Momo Wrappers (2 methods traditional vs easy):
- Traditional wrapper method
- Sprinkle some flour over a flat surface, such as a tabletop or a large chopping board, to prevent sticking.

- Take the rested dough out of the bowl and place it on a flat surface. Knead the dough ball for a couple of minutes.
- Cut the dough into 4 equal pieces and roll each piece into a ball, then roll into a cylinder sausage shape.

- Cut the sausage-shaped dough into small approximately 3cm pieces.

- Roll each small piece into a ball, then flatten each one with your hands into a flat circular shape.

- Use a rolling pin to roll out each flat circular dough piece into a thin wrapper. Dust each wrapper with flour to prevent sticking and cover with cling film or a damp cloth to prevent them from drying out.

- OR Easy wrapper method
- Roll each of the 4 dough balls into a large flat sheet.

- Use a cup or glass to cut out round shapes from the dough. Dust each wrapper with flour to prevent sticking and cover with cling film or a damp cloth to prevent them from drying out.

Filling and Shaping Momos
- Take a wrapper and place a tablespoon of filling in the centre.

- Enclose by folding the tip of the wrapper, making pleats and pinching at the ends. If you want to keep things simple, just fold the circular wrapper in half into a semicircle shape and press the edges together to seal the filling.

- Repeat this process with the remaining wrappers until all the filling is used.
Making the Pork Momo Soup
- In the steaming pot add hot water and the rest of the ingredients for the soup (ginger, garlic, onion, tomato, spring onion, salt).
Steaming the Dumplings
- Grease the steamer with vegetable oil before placing the dumplings inside to avoid sticking.
- Place the dumplings in the steamer and steam for about 15 minutes, or until fully cooked.
Serving the Momo
- Place momos on a plate. Pour the pork soup into a bowl through s sieve then sprinkle chopped coriander on top for fragrance.

- Serve the momo dumplings with freshly made dip and a bowl of soup. Enjoy!
