Tips and Pearls

- Choosing the Spinach: For the best results, choose fresh, vibrant, and crisp mustard greens (Rayo ko Saag). Avoid any leaves that are wilting or have yellow spots.
- Washing the Greens: Always wash the greens just before you're ready to cook them. This will ensure they don't wilt or lose their crunchiness prematurely.
- Prepping the Greens: When cutting the Rayo ko Saag (mustard leaf spinach), use a sharp knife to avoid bruising the leaves. This can lead to discoloration and loss of flavor.
- Garlic and Onions: Sautéing these until golden brown is essential for flavor development. Make sure they're evenly browned but not burnt to prevent a bitter taste.
- Avoid Overcooking: Overcooked spinach loses not only its vibrant color but also its nutritional value and can become bitter. Cook just until the greens are wilted and still retain their green hue.
- Heat Management: Be mindful of the heat. High heat can scorch the ingredients, while too low of a heat can cause the Rayo ko Saag (mustard leaf spinach) to steam rather than sauté.
- Serving: Serve the dish warm. Pairing it with a neutral base like rice or bread can help balance the flavours.

Rayo Ko Saag (Sautéed Mustard Leaf Spinach) रायोको साग
Ingredients
- 400 gram Rayo saag (mustard green leaf)
- 2 tablespoon Vegetable oil
- 2 Dried red chilli
- 5 cloves Garlic finely sliced
- 1 teaspoon Ginger Paste
- ½ Onion Medium sized, finely sliced
- ½ teaspoon Salt
Instructions
Prepping the Mustard Leaves
- Begin by thoroughly rinsing the mustard greens under a stream of cold water, ensuring they're free of any dirt or debris.Proceed to prepare the spinach for cooking.
- Neatly slice the thick stems into slim strips, and cut the leafy sections into larger, roughly one-inch pieces.
Cooking the spinach
- Heat vegetable oil in a pan over medium heat. Once the oil is heated, add dried red chillies, fresh garlic, ginger, and onions into the pan. Sauté these ingredients until they emanate a rich aroma and the garlic pieces turn a delicate golden hue.
- Then introduce the prepared mustard greens to the fragrant mixture. Sprinkle some salt over the leaves. Allow the greens to sauté for about 6-8 minutes, giving the mix an occasional stir. The spinach should begin to wilt and release a beautiful, enticing aroma.
- To ensure the dish retains its vibrant color and appealing texture, it's crucial to avoid overcooking. Keep a vigilant eye on the spinach - the color should remain a lively green. If the leaves begin to take on a yellowish tint, it's a sign of overcooking and immediate removal from the heat is necessary.
